I love to make things from my garden, the postage stamp size that it is. Today, home made pesto! Its the besto! My basil plant was killed by the last frost. My new replacement is quite sad. I had to quarter the recipe, making it a guess at best to my measurements. A close friend recommended halving the basil amount and replacing it with spinach (my fave so one more excuse to use it)! Its basically basil, olive oil, spinach, parmesan cheese, and pine nuts. I covered some Mahi and baked it for about 15mins. Yum! Lyndie ate it but is quite used to pesto...so no complements to the chef from her.
